Many birthdays and holidays were celebrated with this yummy cake! Even GadgetMan, who doesn’t really like cream cheese and the traditional cheesecake, loves this version. I’m posting it here, because the recipe tends to disappear. ForeverMom’s copy disappears when one of us borrows it to make another copy because our copy has disappeared too. I’m going to post it here so it doesn’t get lost again…and share it with anyone else looking for a yummy dessert.
Prepare a graham cracker crust (reserve a little for sprinkling over the top) in an 8X8 pan (or double following recipe for bigger pan) and chill.
3oz Lemon Jello
3/4 cup Boiling Water
8oz Cream Cheese
Can Evaporated Milk
Dissolve 3 oz Lemon Jello in 3/4 cup of boiling water. Allow to cool. Cream together 3/4 cup sugar and 8oz of cream cheese. Slowly add the jello mixture. Mix well. Whip a can of evaporated milk to stiff peaks. Slowly fold in the jello/cream cheese mixture. Pour over graham cracker crust and sprinkle reserved graham cracker crust over the top. Chill for a few hours before serving.
