If it weren’t for this simple way to cook eggs, I fear my kidlets wouldn’t get to eat eggs very often. Eggs are not my favorite food group! But this is so easy, that my kidlets can make them on their own…even the 2 year old if an older sibling will crack the egg for him.
Start with a microwave safe dish, with a diameter of about the size of an English muffin. Crack 1 egg in it, add 1 tablespoon of milk, a pinch of cheese and a shake or two of salt and pepper. Whip with a fork until a bit frothy.
Put the container in the microwave and push 1 – 2 – 3 then start. My microwave may be different then yours, it’s about 3 years old. You might have to adjust the time a bit to get the egg cooked right. 1-2-3 works great for us because it’s easy for all of my kidlets to remember.
The great thing about this recipe is that you can add other things to create more of an omelet and it still turns out yummy and easy. You could even slap this between 2 English muffins with some cheese and sausage for a homemade Egg McMuffin. How easy is that!
